Ingredients:

3 lbs of elk meat, ground or chopped. If the meat is very lean substitute 1 lb of ground port
2 large yellow onions
8 cloves of garlic
1 12 oz tomato past
2 16 oz tomato sauce
4 16 oz cans of Italian style stewed tomatoes
2 16 oz cans of red kidney beans (drained)
2 small cans of mild diced green chillies
4 fresh chopped jalapeños peppers (remove the seeds)
1 cup of red bell peppers diced
5 tsp. red chili powder
3 tsp. dry cumin
2 tsp. salt
2 tsp. dry oregano
2 tsp. pepper
1/2 cup brown sugar
1/2 can of beer

Directions:

1- Brown meat in a heavy pot with a small amount of olive oil. Transfer it to a bowl and drain the meat.
2- Saute the onion, and garlic in the pot with a small amount of oil.
3- Add other ingredients and the brown meat.
4- Cover and simmer on low for an hour or more.
